Asparagus and Acorn Squash

Ingredient List:IMG_9703

  • 1 Acorn Squash
  • 1 stalk of Asparagus
  • 1 tablespoon of olive oil
  • Half of a small bell pepper
  • 1 tablespoon of breadcrumbs
  • Salt & Pepper

Prep Time: 30-35 minutes

Directions:

  1. Peel the squash
  2. Cut it in half
  3. Use a sharp knife to cut long and thin slices
  4. Place olive oil on your pan
  5. Carefully put the squash on the pan
  6. Flip it after 4-5 minutes
  7. Make sure they’re nice and golden/brown
  8. Take out the squash, let it cool down
  9. On the same pan, add a little more olive oil
  10. Cut the end of the asparagus, add it in the pan
  11. Flip every 2 minutes until it’s nice and soft
  12. Place the asparagus on the plate, along with the squash
  13. Spread the breadcrumbs on both the asparagus and the squash
  14. Decorate it with bell peppers
  15. And it’s ready to go!

 

Eggplant Bites

  • 2 eggplants
  • 1  cup of ricotta
  • 1 tablespoon chives
  • 1/2 cup of mozzarella
  • 1 cup of flour
  • 1 cup of breadcrumbs
  • 2 eggs
  • 1 cup of olive oil
  • salt

Prep Time: 35-40 minutes

Directions:

  1. Cut the eggplants in equal sizes
  2. spread it out and add salt
  3. Add the ricotta cheese in a bowl
  4. Add an egg
  5. Chop the chives and add it in the bowl
  6. Put the mozzarella in the bowl
  7. Mix all the ingredients
  8. Place a little of the cheese filling on half of the eggplants
  9. Put the other half of the eggplants on top of each other like a sandwich
  10. Dip the eggplant inside the egg
  11. Then inside the flour, then inside the breadcrumb
  12. Heat up the pan, and add the oil
  13. Place the eggplants, flip after 3-4 minutes
  14. Make sure both sides are nice and golden brown!

Simplest Quinoa Salad

Ingredient List:

  • IMG_96321 1/2 cups of red quinoa
  • 1 small cucumber
  • 1 small carrot
  • 3 green onions
  • 1 tablespoon of cilantro
  • 1 tablespoon of olive oil
  • Half on an avocado
  • 1 lemon or lime
  • Salt & red pepper

Prep Time: 30-35 minutes

Directions:

  1. Place the quinoa in a sauce pan
  2. Add 2 1/2 cups of water
  3. Let it come to a simmer
  4. Start chopping the cilantro
  5. Cut the cucumber in small cubes
  6. Chop the carrot in small pieces
  7. Chop the green onions
  8. Cut the avocado in half
  9. Cut half the avocado in small cubes
  10. Place all the ingredients in a big bowl
  11. Add olive oil, lemon or lime
  12.  Don’t forget salt & red pepper!

Simple Kale Salad

Ingredient List:

  • 1 cup of dried cranberries
  • 1/2 a cup of chopped almond
  • Half of an avocado
  • Table spoon of Balsamic Vinaigrette
  • Salt & pepper

Prep Time: 15 minutes

Directions:

  1. Carefully wash your kales
  2. Separate the leaves from the stem
  3. Chop the kale
  4. Add it in a big bowl
  5. Add the dried cranberries
  6. Chop the almonds
  7. Add the almonds to the bowl
  8. Add the balsamic vinigrette
  9. Don’t forget a little bit of salt and pepper!

 

  

Spinach Alfredo Pasta

  • Box of your favorite spaghetti
  • 2 cups of spinach
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • 1 cup of Alfredo sauce of your choice
  • 2 tablespoons of cilantro
  • A cup of shredded mozzarella cheese

Prep Time: 30-35 minutes

Directions:

  1. A box of your favorite type of speghetti
  2. Boil water in your sauce pan
  3. Add a pinch of salt
  4. Add the spaghetti in the boiling water
  5. After 7-8 minutes, rinse the spaghetti
  6. Add olive oil to your pan
  7. Chop the garlic, add it to the pan
  8. Add the chopped onion
  9. Sauté it until the onions are soft and caramelized
  10. Add the chopped spinach
  11. Add the Alfredo sauce
  12. Add salt and pepper
  13. Let it simmer for 3 minutes
  14. And it’s all ready!

Veggie Pasta Salad

Ingredient List:

  • A box of your favorite pastaIMG_9562
  • Bell peppers (about 3 small)
  • 1/4 cup of green onions
  • 1 cup of peas
  • 1 tablespoon of cilantro
  • 1 tablespoon of olive oil
  • 1 lemon
  • salt & pepper

Prep Time: 20 minutes

Directions:

  1. Add water to your sauce pan
  2. Add salt
  3. Add the pasta , let it cook for 7-8 minutes
  4. Drain the pasta
  5. Start cutting the bell pepper
  6. Cut the green onions
  7. Add the the peas
  8. Chop the celontro
  9. Add a tablespoon of olive oil
  10. Juice 1 lemon
  11. Add salt and pepper for taste
